Production area: Isle of Lipari (Isole Eolie). Type of soil: Sandy, vulcanic, deep, fertile and rich in trace elements. Vines per hectare: 9.000
Vinification: direct pressing of the grapes in a pneumatic press. No clarification of musts, only static decantation at 16°C, fermentation at about 20°C in steel tanks (Malvasia) and barriques at the 3rd or 4th stage (Carricante) with batonnage and aging on lees for about 6 months. The wine is decanted repeatedly to obtain natural clarification and then placed in bottles.
Ageing potential: 4 - 5 years.
