Description:
The colour shows intense ruby tones. Fresh but complex bouquet, initially fruity and vinous, with time elegantly spicy and ethereal notes unfold, the floral aromas of rose petals and the fruity aromas of cherry and plum are quite pronounced, but there are also currants, ripe blackberries, vanilla and green pepper. The taste is complex and fruity, with soft tannins that highlight the balanced presence of the wood, and finishes with a hint of sour cherry.
According to the regulations, the designation "Superiore" may be used together with the name Barbera d'Alba if a minimum ageing period of at least 12 months is respected.

Barolo, province of Cuneo, Piedmont.
Vinification:
Maceration of about 12 to 15 days with frequent pumping over and submerging of the marc. After malolactic fermentation, the wine is aged for one year in Slavonian oak barrels. This is followed by ageing in the bottle, which is stored horizontally for a few months.
Food pairing:
A generous wine that goes pleasantly with hearty and hearty dishes, lightly roasted foods, roasts, grilled red meats, cooked meats and well-matured cheeses.
Serving temperature:
16 - 18°C.

The Cabutto family has an ancient history linked to the territory of Barolo.
