Description:
Wine of an intense red colour, with an ample, penetrating and ethereal bouquet, a characteristic dry and warm flavour.
Grape variety:
Merlot - Veneto IGT.
Production area:
Cultivated in various types of soil such as clayey, limestone and partly stony. Mainly cultivated in the plains and first hills.
Vinification:
The grapes are harvested when fully ripe, performing a red vinification with maceration on the skins. Fermentation takes place at a controlled temperature and with selected yeasts, followed by racking. Then follows a short period of aging in steel tanks.
Food pairing:
It goes well with roasted white meats, boiled meats, stews and pork.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 3 years.

The company Parolvini, has origin back in 1917 when the current owner's grandfather used part of his house for the sale of his vineyards' products. The wine trade was later continued by his son, Callisto, which store became a wine benchmark for neighbouring towns. Around the 70s, Callisto gave to his sons Dario and Bruno the company's care, developing and expanding the business. Collaborating with the producers of the most world renowned in the Veneto, initially the two brothers devoted themselves to supplying local restaurants within a few miles and then expanded gradually areas of northern Italy till cover most of Europe.
