Description:
Intense ruby red color that turns garnet over the years. Intense, fruity bouquet with hints of cherries, sour cherries and small wild berries, spicy. Warm and enveloping taste, full body, a wine with great structure.
Grape variety:
85% Corvina, 10% Rondinella, 5% Oseleta and Croatina – Veneto Valpolicella DOCG.
Production area:
S. Ambrogio di Valpolicella, hilly area, exposure south-east, south-west, 300 - 350 m a.s.l. Predominantly chalky, calcareous soil.
Vinification:
After being harvested and sorted manually into small 5 kg crates, the grapes are left to dry in well-ventilated attics for about four months. Only in January are the grapes pressed using the innovative drying process. This is followed by slow fermentation on the skins for 15-20 days and storage for at least 4 years in large oak barrels and another year in the bottle before the wine is allowed to go on sale.
Food pairing:
Ideal with roast game, grilled red meats and aged cheeses, but also excellent as a meditation wine.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 20 years.
