Description

Description: 
Very intense ruby red colour. Intense bouquet with aromas of liquorice, cocoa and vanilla mingling with ripe fruity notes of cherry and plum. Full, intense flavour of refined elegance and remarkable longevity. 

Grape variety: 
Corvina 55%, Rondinella 25%, Cabernet Sauvignon 15%, Nebbiolo, Croatina and Sangiovese for the remaining 5% - Amarone della Valpolicella DOC. 

Production area: 
Vallata di Negrar, in the Veneto region, in the province of Verona, a total of twelve hectares are planted with vines featuring the main autochthonous grape varieties of the area, such as Corvina, Corvinone, Rondinella and Molinara. 

Vinification: 
During the manual harvest, the grapes are rigorously selected and taken to the drying room, where the long drying phase takes place, during which the berries dry up and noble rot develops. After drying, the grapes are gently pressed and the must thus obtained undergoes spontaneous alcoholic fermentation, with maceration on the skins for about three weeks. The entire fermentation phase lasts 45 days. The wine is then transferred to large Slavonian oak barrels for the very long ageing process of 7 years. 

Food pairing: 
Pairs well with mature cheeses, game, braised red meats, roasts and grilled meats. 

Serving temperature: 
16 - 18°C. 

Ageing potential: 
more than 20 years.

1500 ml - 150 cl - 1,5 lt. magnum bottle.

For years, the name of Giuseppe Quintarelli has been an undisputed guiding light on the Valpolicella stage, representing as only he is capable of the deepest and most true quintessence of a territory that is now rightly recognized as one of the most prestigious of Italian viticulture, able to offer simply extraordinary wines, as others do not meet. In the Negrar valley, in Veneto, in the province of Verona, there are twelve hectares of vines in total, where the most important indigenous varieties of the place meet, such as corvina, corvinone, rondinella and molinara, which each season give rise to an average of about 50 thousand bottles a year.
