Description:
Intense red color that turns garnet with age. Elegant, spicy bouquet with notes of cherry, sour cherry, dried fruit and plum. Balanced, velvety and smooth taste.
Grape variety:
85% Corvina Veronese, 10% Rondinella, 5% Oseleta and Croatina - Veneto Valpolicella DOCG.
Production area:
S. Ambrogio di Valpolicella, hilly landscape, south-east exposure, 300 - 350 m a.s.l. The soil is predominantly chalky, calcareous and rich in skeleton.
Vinification:
After the harvest and a careful selection, the grapes are stored in crates in the attic for 3 to 4 months, taking care to keep the grapes at a certain distance from each other to allow good drying. The dried grapes are then pressed and macerated on the skins for 15 to 20 days at a temperature of 23 to 25°C. The wine is then aged in oak barrels for at least 36 months.
Food pairing:
Ideal with roasts, game and mature cheeses, but also alone.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 10 years.
