Description

Description: 
A wine with identity and personality, where elegance always reigns supreme. Complex, balanced and harmonious, of exceptional longevity. Intense red color with garnet reflections. The typical notes of plum, cherry and sour cherry stand out on the nose, followed by tea leaves, liquorice and spices. On the palate notes of red berries, accompanied by gentle spicy notes, in perfect balance with acidity and tannins. 

Grape variety: 
80% corvina veronese, 20% rondinella - Veneto Valpolicella DOCG. 

Production area: 
Valpolicella Classica, Novare wineyard in Arbizzano di Negrar.

Vinification: 
The Corvina and Rondinella grapes are left to dry in a completely natural way for a long time, around 120 days. Then they are slowly fermented in the middle of winter, which ensures a long maturation and thereby a really surprising longevity, even several decades! Then follows a slow fermentation in concrete vats that lasts about 50 days, of which 20 days of maceration on the skins. Then about six years of aging in Slavonian oak barrels and bottle aging for another 12 months. 

Food pairing: 
Ideal in combination with risotto with meat, blue cheese, mature cheese, pasta with meat sauce, game, red meat in sauce, roasted and grilled meat. 

Serving temperature: 
16 - 18°C. 

Ageing potential: 
more than 20 years.
