Description: Intense ruby red colour with light garnet reflections. Bouquet with aromas of camphor, undergrowth, jammy blueberries, cherries in alcohol, tobacco, black pepper, black truffle. Concentrated, juicy taste, fine and integrated tannins, full-bodied, deep and complex, fine and incredibly persistent.
Production area: A classic Bordeaux blend that sees the light of day in the beautiful Valpolicella area. In this area, dedicated for centuries to the cultivation of red grapes, Cabernet Sauvignon, Cabernet Franc and Merlot have found the optimal conditions to ripen grapes of excellent quality. The vines are about 30 years old and are grown on calcareous, basalt-rich soils.
Vinification: At the end of the harvest, the best and ripest grapes are taken to the cellar where they dry out before being spontaneously fermented with indigenous yeasts and macerated on the skins. Before bottling, the wine goes through a long ageing period that includes 3 years in French oak barrels and 3 years in Slavonian oak barrels.
Food pairing: Pairs well with mature cheeses, game, braised red meats, dark chocolate, roasted or grilled meats.
Serving temperature: 16 - 18°C.
Ageing potential: more than 20 years.
