Description:
Shimmering and transparent. Intense aroma of typical forest fruits. Dry, fruity and fragrant taste.
Teroldego Rotaliano or "Oro del Tirolo", probably an interpretation of the phrase "Tyrolean gold".
During their rule in Trentino, the Austrian rulers appreciated this wine for its deep, intense colour with raspberry and blackberry aromas and also for its full, rounded flavour, which has a reasonable acidity and is free of tannins: precisely the gold of the Tyrol.
Vinification:
The colourful, sugary red grapes are harvested at the end of September.
Fermentation takes place on the skins for about ten days. After the wine has been pumped off, the marcs are fed directly into the distillery's boilers.
The grappa obtained rests in steel barrels for about a year, is diluted to drinking strength, filtered and bottled. After a short resting period, it is put on sale.

In 1994 the alembic was modified in order to obtain an even more pure, fine product capable of transmitting the aromas of fresh pomace. In the same year, the aging room where the Pini grappa is refined and aged was expanded; the first Pini grappa was born in 1984 with only six years of aging in oak to pass to that of 10 years. The goal of the future, perhaps of the new generation, will be that of a grappa aged 20 years.
