Description:
Luminous transparent. Intense fragrance, of honey and wild herbs. Soft and delicate hazelnut flavour.
Nosiola is the only typical and autochthonous Trentino variety with white fruits that has always been cultivated in Trentino. Recently it has experienced a new and growing success.
Little or nothing is known about its history, it was certainly already widespread in Trentino at the beginning of the last century and its cultivation is linked to two areas: the Valle dei Laghi and the Adige on the hills of Sorni, Pressano and Lavis.
In the Valle dei Laghi, the Nosiola grape is made into a nectar called Vino Santo due to the mild climate tempered by the "Ora del Garda" wind, while on the Lavis hills the alpine climate shapes the Nosiola into a fruity, soft white wine reminiscent of hazelnuts.
Vinification:
The grapes are vinified white, i.e. without skins. They are put into steel tanks to undergo alcoholic fermentation under strict control of temperature, acidity and pH. After about ten days, the marc is ready for distillation.
The resulting grappa rests in steel barrels for about a year, is diluted to drinking strength, filtered and bottled. After another short resting period, the grappa can be put on sale.
Recommendation for use:
Recommended neat or after a meal.
Bottle to:
500 ml - 50 cl - 0,5 lt.

In 1994 the alembic was modified in order to obtain an even more pure, fine product capable of transmitting the aromas of fresh pomace. In the same year, the aging room where the Pini grappa is refined and aged was expanded; the first Pini grappa was born in 1984 with only six years of aging in oak to pass to that of 10 years. The goal of the future, perhaps of the new generation, will be that of a grappa aged 20 years.
