Description:
Deep ruby color. Intense bouquet, rich in berries and sweet spices. Full, enveloping and balanced taste, endowed with freshness and aromaticity with lively tannins.
Grape variety:
Corvina and Corvinone 85%, Rondinella 10% and Barbera 5% – Veneto Valpolicella DOC.
Production area:
Northeast of Verona, on the hill that separates Montorio from the Illasi Valley. Calcareous soil with predominantly ferruginous red clay in the Il Perlar and Palazzina vineyards, medium clayey tuff structure in Monte del Drago.
Vinification:
100% of the Valpolicella Superiore is fermented on the incompletely pressed skins of the Amarone for 12-15 days at an uncontrolled natural temperature. Regular pushing of the pomace cap. malolactic fermentation. Aging in 350 liter, 500 liter and 3500 liter French oak barrels for 12 months. A Ripasso whose grapes are not dried.
Food pairing:
Can be combined with risotto, pasta dishes, game, pot roast or braised meat, roasted and grilled meat.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 8 years.
