Description

Description: 
Bright, intense cherry red. On the nose the wine is reminiscent of ripe cherry, liquorice and wild herbs; the smooth, ripe tannins give the wine an especially harmonious mouth-feel with tangy fresh herbs on the finish. 

Grape variety: 
41% Merlot, 26% Cabernet Franc, 9% Tempranillo, 7% Cabernet Sauvignon, 9% Petit Verdot, 8% Syrah - South Tyrol Vigneti delle Dolomiti red 

Production area: 
Finest sites in the Manincor estate, at the ''Seehof'' and ''Panholzerhof'': south-east facing overlooking the Lake of Caldaro at an altitude of 250 - 280 m a.s.l. Rich soils consisting of sand and clay mixed with limestone gravel and morainal debris. 

Vinification: 
Each batch was crushed separately and the spontaneous fermentation with the skins took place in open-top oak vats. In 2007 fermentation with the skins was extended to three weeks to extract the optimum of ripe tannins. The young wine was matured for eighteen months in barriques, one-third of which were new. The individual wines are only blended shortly before filling. 

Food pairing: 
It is an excellent match for venison and game, well-seasoned red meats and piquant hard cheeses. 

Serving temperature: 
16 - 18°C, in its youth the wine will benefit from decanting; savour from medium-large Bordeaux glasses.

more than 5 years.

The 400 year-old wine estate, carefully and prudently extended by the wine cellar built beneath the vines and hardly noticeable from above, epitomises today the tradition and aspirations of a superior wine culture. 
When Count Michael Goëss-Enzenberg took over Manincor from his uncle in 1991 the estate’s grape production was highly in demand, though it had no winery of its own and the grapes from its top sites were sold to the Kaltern and Terlan Wine-growers’ Cooperative Cellars. This soon changed. The aim was to produce top quality grapes and transform them into superlative wines in an immediately recognisable Manincor style. 
Efforts initially went into the work in the vineyards, quality was increased by reducing yield per vine and eventually vineyard husbandry was carried out along more natural lines. Finally in 1996 the estate was able to begin crushing the grape production in a cellar of its own. 
The Enzenberg family has been involved with the topic of biodynamics from the start. 2006 was the first year in which all the vineyards were cultivated on biodynamic lines, and since 2009 the entire estate has been legally certified as 100% biodynamic.
